But about an hour north of Nice, sort of on the fringe of Provence, tucked into the maritime Alps is a tiny town called Villars-sur-Var where Clos Saint Joseph thrives. The domaine is the only domaine in the area, it has vines planted around a winding river, enclosed in stone walls and the most magical white wine is produced. This white is a blend of rolles (aka the French word for vermentino) and ugni blanc. The white wine is creamy, salty, stony and a touch bitter all at the same time. The grapes are grown in limestone rubble, which is the best kind of rubble btw, and the domaine practices biodynamics.
