Maison Lou Dumont, Passe-tout-grains, Burgundy, Gamay/ Pinot Noir, 2023
When you see Passe-tout-grains on a wine bottle this is indicating an appellation aka specific area in Burgundy. In this area, the French wine laws dictate that you must blend specific percentages of both Pinot Noir and Gamay into the wine. This is very unlike the rest of Burgundy which is doggedly single varietals only (pinot noir for red, chardonnay for white.) The translation of Passe-tout-grains is to pass all the grapes. Blend it up, make a smoothie…hahah ok, not that crassly. There is tons of finesse that goes into this wine, it's evident from the moment you open the bottle. Oftentimes, a little bit of carbonic maceration is used to get the juice really jumping. I love this wine so much, it feels like a blooming tulip. The domaine is based in Gevrey Chambertin, born from the passion of two friends in early 2000s. It's quite spectacular– this is mostly pinot with about 15% gamay blended with it to adhere to the appellations rules.
Serving temp: Cellar temp around 65 degrees, store in a dark and cool spot.
Pairing: Really perfect with mushroom risotto, any leaner meats, or fish like salmon.
